Following a three-year, multi-million-dollar renovation, the former Jalousie Plantation on St. Lucia reopened as Sugar Beach, a Viceroy Resort after its original incarnation as an 18th-century sugar mill. The resort has 59 villas and eight beachfront bungalows, as well as 11 revamped rooms, priced from $350 per night. New dining options include an upscale Caribbean bistro and a casual waterfront restaurant; a new eatery overlooking the historic sugar-mill ruins will open for breakfast in January. Guests can also reserve cabanas for private dining or get late-night food at one of the resort’s two bars. A nearly 10,000-square-foot spa has also opened, with seven tree-house-style treatment rooms inspired by the 100-some acres of rain forest surrounding the property.
